Foodie Friday: How to Make Zucchini Mini Pizzas

Zucchini pizzas changed my life. They make for a perfect pizza alternative or appetizer when hosting guests. And this is coming from yours truly, someone who almost ate a slice of pizza off the ground in college. Even mores, my picky eating little sister gave these the green light. So you basically have to try them.

In fact, try these out for a Super Bowl Sunday appetizer (go Panther, but obvi a Jet/Eagle(?) fan at heart)! I know , zucchini pizzas are SUPER untraditional Big Game finger food, but your vegetarians will be grateful and it’ll push your meat-lover out of their comfort zone. Just be sure to remind them that life starts outside their comfort zone, so dig in! 

If all else fails just tell your meat-loving crowd to think of them as healthy bagel bites…or was I the only one obsessed with bagel bites in high school?

What to Buy:

  • 3 zucchinis
  • Red marinara sauce (not brand specific, whatever you like!) 
  • Mozzarella cheese 
  • Italian seasonings (I bought a $.99 seasoning from Aldi)
  • Optional: Turkey pepperoni (for the meat lovers) 

How to Make:

Clean and cut zucchini.

You can cut into small circles (like you would a cucumber) or long ways. I enjoy cutting into small circles because they tend to get more crispy in the frying pan. Usually three zucchinis will feed two and you might have leftovers (depending how hungry you are). 

Fry the zucchini.

Throw the zucchini slices into a hot frying pan with a little bit of oil. You will only need to fry for a couple of minutes. I like to see the edges get golden brown since I like an extra crunch to my veggies. 

Make your pizzas.

Place your fried zucchini on a baking pan. Then add marinara sauce, mozzarella cheese, seasonings and (if you want) turkey pepperoni.

 

Broil and eat.

Place baking sheet in oven with broiler on. Check every 5 minutes. When the cheese melted to your satisfaction, take it out and enjoy!
